Soane Fakatava's focus is the fusion of traditional Polynesian and European Haute Cuisine. Under his training our sous-chef won the South Pacific Tourism “Culinary Award 2017/ 2018” and the “Best Cook Award For Emerging Talent” at the Heilala Festival for the King of Tonga.
